MARDI GRAS CAKE
1 (30 oz) can Del Monte Fruit Cocktail 1/2 cup margarine or butter 1 cup firmly packed brown sugar 1 pkg (18 1/2 oz) lemon cake mix 1 cup water
Drain fruit cocktail, reserving 1/3 cup syrup; set aside.
Melt margarine in 13x9-inch pan or (12-inch) oven-proof skillet. Add sugar. Arrange drained fruit in sugar mixture; set aside.
Prepare cake mix as package directs, except use 1 cup water and the reserved 1/3 cup syrup to replace the water. Spread over fruit.
Bake at 350 degrees F for 45 to 50 minutes or until tests done. Cool 5 minutes; invert onto large serving dish.
Serve warm or cold with ice cream, if desired.
