Cooking Time: 10 minutes
Do-Ahead: The butter can be prepared 3 days in advance, cooled to room temperature, and stored, covered, in the refrigerator.

  • 3 tablespoons finely chopped red onion

  • 1 medium clove garlic, finely minced

  • 1/2 teaspoon finely minced ginger

  • 1/2 teaspoon curry powder

  • 1/4 teaspoon salt

  • 12 hamburger buns

  1. Heat 2 tablespoons of the butter in the saucepan over medium heat and saute the onion for 3 minutes, until it is limp and translucent. Add the garlic and continue to saute for 1 minute.

  2. Add the remaining 6 tablespoons butter, the ginger, curry, and salt to the saucepan and blend the ingredients with a wooden spoon. Simmer the butter over medium-low heat for 4 minutes to meld all the seasonings.
